Bollinger Winemakers Dinner

On Thursday, March 26, join us for a one-night-only wine dinner at The Blue Room, where a specially curated course will be paired with Champagne Bollinger. We are honored to welcome Champagne Bollinger Ambassador Mr. Tomohiko Shinbo, who will share reflections on Bollinger's heritage, the terroir of Champagne, and the spirit behind its wines.

Founded in 1829 in the village of Aÿ in France's Champagne region, Champagne Bollinger has remained devoted to traditional craftsmanship and uncompromising quality. First honored with a Royal Warrant by Queen Victoria in 1884, Bollinger continues to be awarded this distinction. Shaped by the strength of Pinot Noir, the freshness of Chardonnay, and the creamy effervescence born of extended aging in oak, Bollinger reveals a singular expression where depth and refinement exist in perfect harmony.

    Tomohiko Shinbo
    Born in Matsumoto, Nagano, Tomohiko Shinbo was raised in Japan, the United Kingdom, and the United States. He studied Journalism at a state university in San Diego on the U.S. West Coast. After returning to Japan, he began his career with a globally operating distribution company before transitioning into the world of luxury brands. For more than twenty years, he has led marketing and communications for renowned fashion, leather goods, watch, and jewelry houses, developing promotions that enhance client engagement and satisfaction.
    His first encounter with Bollinger dates back to his childhood in the United Kingdom. He vividly recalls watching the BBC broadcast of Royal Ascot, where Queen Elizabeth II appeared at the elegant award ceremony alongside Bollinger. Guided by the open-minded and generous spirit that defines the Bollinger style, he now dedicates himself to sharing its story and character in his role as Ambassador.
